Jamun Parfait

Ingredients:

Prepare Jamun Compote:

-Jamun (Java plum) washed & deseeded 400g

-Water ¼ Cup

-Lemon juice 1 tsp

-Vanilla essence 1 tsp

-Cornflour 1 tbs

-Honey 2 tbs or to taste

 Prepare Jamun Yogurt Mixture:

-Hung curd 450g

-Honey 3 tbs or to taste

-White chocolate (Melted) 50g

-Vanilla essence 1 tsp

-Chia seeds 1 tbs (soaked in 2 tbs water)

Assembling:

-Granola 2-3 tbs
-Pista (Pistachio) sliced

 

Direction:

Prepare Jamun Compote:

-In a blending jar, add Java plum, blend well until a smooth puree forms. (mix in between)

-In a pan, add ¾ of the java plum puree (reserve ¼ of puree for later use), water, lemon juice, vanilla essence, and cornflour, whisk well.

-Turn on the flame.

-Cook on medium flame for 2-3 minutes until moisture is reduced.

-Add honey, turn off the flame, the jamun compote is ready!

-Let it cool completely.

 Prepare Jamun Yogurt Mixture:

-In a bowl, add hung curd, reserved jamun puree, honey, melted white chocolate, vanilla essence, and whisk well until properly incorporated.

Assembling:

-In a serving cup, add granola, pipe out some prepared Jamun yogurt, and prepared jamun compote, and garnish with pistachios & granola.

-Refrigerate & serve chilled!
